Are you a little bored with the same old, same old Thanksgiving meal every year? Well this time why not offer to make this super simple yet elegant BUTTERNUT SQUASH SWEET POTATO SOUP.
I can’t take credit for the creation of this incredible recipe. My friend Laura brought it to a potluck the other day and I almost dropped to my knees when I tasted it. I knew I had to share it with The Yoga Tree Community.
With the sweetness of the squash and sweet potato, an accent of pear and the secret ingredient a cinnamon stick and white wine you will shock your family and friends into thinking you are a gourmet chef!
I could hardly wait to make it. I ran to the grocery store, picked up all the ingredients and whipped it up when I got home.
And here’s the most exciting part. It only takes about 30 minutes to make! Unless of course you are cooking for 50- because that’s a lot of squash to chop.

Butternut Squash Sweet Potato Soup
What you need:
1 medium size butternut squash-peeled and chopped
1 medium size sweet potato- chop – optional to peel (it will be creamier if you peel it)
1 cinnamon stick
1 onion Ðcut in slices
1/4 cup of white wine
2 pears- peeled
Heavy Cream (optional- Soup will no longer be vegan if you add this ingredient)
What to do:
In a saucepan place chopped sweet potato, squash and cinnamon stick.
Cover with enough water so veggies are covered.
Bring to a boil and then simmer until the vegetables are soft.
In the meantime sautŽ onion in olive oil until translucent.
Add onion to cooked vegetables in water.
Add white wine and pears and simmer until pears are soft
Puree in a blender.
*Add heavy cream to taste if you like. (No longer vegan)
